Artisan Loaf Premix: Make your own artisan style loaves, baguettes, rolls, foccacia and pizza bases from this premix.
You can make two 770g (unbaked weight) artisan loaves or 4 pizza bases per bag of premix or adjust the quantities to make your loaves bigger or smaller.

10g Apple Cider Vinegar
1. Mix together, cover and allow to rise in a warm place for an hour. Preheat oven to 230C.
2. Using rice flour, on a lightly dusted surface, shape into a round boule and place in a bowl or banneton, or shape into rolls or place in a loaf tin, cover and allow to rise for 30min.
3. If you are making a boule shape, score your bread before baking at 240C for 20min then reduce temperature to 200C and bake for another 20min or until internal temperature is 95C (you can use a meat probe to test this).
Allow bread to cool completely before cutting as it will seem gummy if not allowed to cool first.
For Pizza bases use half the quantity per base and follow step 1 and 2 above then roll out into a circle about 5mm thick. Lightly dust with rice flour then prick with a fork all over. Bake in an oven preheated to 240C for 3-5min before adding your favourite pizza toppings. (If you have a pizza stone you can add the toppings then bake on the preheated pizza stone without pre-baking the base.)
